Tara Tuesday: Paleo Pumpkin Banana Pancakes

I have a very special treat for you fine Paleo peeps tonight! One of my closest friends, Tara, tested out one of my breakfast recipes and photographed it for my little ole blog. Her photos are beautiful! Check out more of her work HERE.  I only wish she didn't live across the country in the SF bay area so we could cook and snap photos and eat together all the time!

Now for these pancakes. Seriously YUM! Here is what Tara had to say: "These pancakes are like eating banana bread topped with a little goodness.  The pumpkin gives it a rich savory flavor and the banana keeps them creamy and sweet.  All around a little delightful start to the day."

Ingredients (serves 2):
4 eggs
1 cup almond flour
¼ cup canned pumpkin
½ ripe banana
1 tbs pumpkin pie spice (or mix cinnamon, nutmeg & ginger equally to total 1 tbs)
1 tsp vanilla extract
1 tsp baking soda
½ tsp salt
1 tbsp honey (optional)
100% pure maple syrup
berries or chopped pecans for garnish (optional)
1. Mash the banana in a medium size bowl.
2. Whisk together the banana, eggs, honey, and pumpkin.
3. Add the almond flour, vanilla, salt and spices and mix thoroughly.

Top with a small amount of maple syrup, or berries, or nuts, or all!
